Yummy Baked Eggs In Avocado
This recipe is SO versatile! If you love avocados this is SUCH a treat! Good fats to really help you get a good start to the day! My favorite way is to have it with 2 slices of center cut bacon and some red pepper flakes sprinkled on top! This is a great post workout recipe, or breakfast. This has a lot of good fat in it, so it needs to be eaten knowing you're going to be burning it off. Avocados are such a staple in my life. If you need to cut down on the cholesterol, this can be done with egg whites instead. Such an easy recipe!
Ingredients:
1Medium Avocado
2Medium Eggs (or 3 large egg whites divided between the 2 halves)
Salt & Pepper, to taste
Directions:
Preheat oven to 425. Slice the avocado in half and remove the pit. Scoop out some of the flesh inside of the avocado, leaving a rim. Crack eggs into the well created in the avocado. Season with salt and pepper, to taste. Bake in a 425 degree oven for 15 minutes or until eggs have reached your desired doneness. Finish with fresh herbs, crisped bacon, hot sauce, or any other topping you can imagine!
