Monday Munchies: Street Tacos Keto Style


So I get asked to create and try recipes all the time. Tortillas is one of them. And I'll be honest, I am always up for trying new things and taking the challenge, this one had me hesitating a little LOL. So recently a client asked me about Keto tortillas. I tried several store brands, and I'm gonna just be say, I did not enjoy any of them. I can do Ezekiel tortillas ok, but most that I tried were tasteless, and almost like they had sat on the shelf a very long time. So I adapted a recipe, and with trial and error, behold, the Keto tortilla. The cool thing about those 4 tortillas you see on that plate is that is only 156 calories! And net carbs? 8.8 and 11 g of protein!! In a serving of 4!! And these were VERY tasty.

Servings

16 small tortillas, or 8 medium sized

8 large egg whites

1/3 cup of coconut flour

10 Tablespoons of water

1/4 teaspoon of baking powder

1/2 teaspoon of garlic powder

1/4 teaspoon chili powder

1/4 teaspoon salt

Go ahead and start heating a skillet while you're mixing on medium heat, because I definitely learned it needs to be hot and ready. Then, literally just throw it all in a bowl and I used a whisk to mix it all together until it's really a uniform texture. It's a very watery mixture.

Think Crepes. That's exactly what it reminded me of.

Spray your pan with nonstick spray before each tortilla (be mindful of not doing that into an open flame if you have a natural gas stove, ask me how I know LOL:)

I use 1/4 cup of batter and I just kind of tilted the skillet into a circle to spread the mixture evenly. It took 2-3 minutes on the first side for me, and then it flipped easily, the second side only took about a minute. You want it to be a little brown. I used a cast iron skillet for mine.

Do not stack them while they are still warm, let them cool if you're going to stack them.

I'm not gonna say I wasn't dreading tasting these. I feared they would taste like eggs. I didn't think they did at all once I stuffed them with ingredients! I had to fight my children for them! LOL!

We did vegetarian street tacos in this pic. It included avocado, kumato tomatoes, green onions, and queso fresco. I added jalepenos and a touch of siracha, because I love some heat on mine. But you could stuff these with anything fresh! Shrimp would be amazing! Oh my goodness! My calorie intake for all 4 street tacos was 360.
