Monday Munchies: Snickers/Peanut Butter Cup Protein Bar


Did she say snickers??

Yes. She did.

Holy yum! A great adapted recipe, easily able to make vegan. Paleo friendly, and what I consider totally clean! These do end up tasting more like a peanut butter cup or a peanut butter snickers bar, but still oh so delicious

I will say, these even hold together if you want to be lazy and just put chocolate on the top. They hold together nicely, and don't even need to be refrigerated. I used them as snack all through this past weekend while I was at an incredible conference! And they kept great the whole weekend, and are VERY filling. 1 easily becomes a meal replacement. I so hope you enjoy these!

Super easy to make!

For the nougat layer
  • 1 cup coconut flour This is the brand I use

  • 1 cup vanilla protein powder XS is the only brand I use tastes amazing and has digestive enzyme

  • 2 tbsp cocoa powder (If you decide to use the chocolate XS protein powder, you can leave this step out, or even make it more chocolatey by keeping it in)

  • 1/2 cup smooth peanut butter can sub for any nut or seed butter

  • 1/2 cup sticky sweetener of choice (I used raw agave)

  • 1/4 cup milk of choice (I used organic cashew milk)

For the caramel layer
  • 1/2 cup smooth peanut butter can sub for any nut or seed butter

  • 1/2 cup sticky sweetener of choice (I used raw agave)

  • 1/2 cup coconut oil optional but I HIGHLY recommend it, it is what helps this layer solidify, and helps add some excellent fat to this bar that is what makes it so satiating.

For the chocolate coating

  • Line an 8 x 8 or deep dish pan with parchment paper and set aside. (I actually use a multi-mini loaf pan for protein bars as well, this way they pre-form I just pop them out and wrap with plastic wrap when they are done hardening)

  • In a large mixing bowl, add your coconut flour, protein powder, and cocoa powder and mix well. Add your peanut butter, sticky sweetener and mix until a crumbly texture remains. Using a 1/4 cup, add milk of choice until a thick batter remains. Transfer the batter to the lined pan and refrigerate.

  • In a microwave safe bowl or stovetop, start making your 'caramel' by combining your peanut butter, sticky sweetener, and optional coconut oil. Melt until fully immersed and silky (this takes very little time). Pour over the top of the Snickers nougat layer.

  • Once firm, remove from the loaf pan and cut into bars, Or go ahead and pop them out if you used the mini loaf pan, and want chocolate all around, or you can even leave in while you put your chocolate on if you only want chocolate on the top. Melt your chocolate chips of choice. Dip each snickers base in the chocolate until evenly coated. Refrigerate until chocolate has firmed up

  • Eat and enjoy!

RECIPE NOTES

* Depending on the protein powder and coconut flour you use, you'll need more or less than 1 cup. Adjust accordingly.

** For a thicker chocolate coating, consider doubling the amount
