Monday Munchies: The Bun-free Breakfast sandwich


Ok so this recipe began as a desire to keep a fun "sandwich" while still avoiding bread. The nutrition is without any breakfast meat, but you could totally add centercut bacon if you like. I'm a huge fan of kumato tomatoes this time of year (so sweet and juicy) so that is also added in my pic.

Ingredients:

2 large eggs

1/4 avocado

1/2 slice of cheese of choice (I used gouda in this pic)

Veggies of choice added

salt and pepper to taste

Use 2 mason jar lids. I heat them up in the pan that I've sprayed with non stick cooking spray, and fully spray the inside of the lids with non-stick cooking spray. After they heat to a good medium temp, crack the egg into the lids, and break up the yolks with a fork (the pan should be hot enough for the eggs to start cooking immediately. Add salt and pepper to taste.

After the whites start to harden, add a tablespoon of water, and cover with a lid. Let them cook and in the meantime, mash the avocado, remove lid and flip, and then replace lid, this should total take about 2-3 minutes. Once the egg is fully cooked to your taste, put out on a plate (I use a spatula and remove them onto the plate, the lids easily just pop off for these perfect eggs!:) top with the smashed avocado (bacon if you want but make sure you add in the macros), any other veggies, and top with the other half. Eat and YUM! Great protein! Great Fat! Great meal for any time of the day! If you need to avoid the cholesterol, leave the yolks out, still a YUM sandwich, and it doesn't change the protein.
